Most of our recipes are for two people plus leftovers. This egg salad sandwich recipe is scaled down. It serves one and does not provide leftovers. What’s great though is it is easily scalable to serve two or more.
Some recipes just quietly become a part of your routine—and this egg salad is one of them for me. I’ve been making it for over ten years now, and it originally came from a feature in Real Simple called “Healthy Snacks for Every Attack.” This one was listed under “Snacks for the Car,” but let me be honest—I’ve never actually eaten it in the car. For me, this has always been a favorite lunch sandwich or afternoon snack.
Here’s what I do: at the beginning of the week, I hard boil 5 eggs. Then they chill overnight and I have lunch set for several days. Each morning, I’ll mash one up and mix in the other ingredients and have my lunch for that day. It’s quick, satisfying, and full of protein.

Celery Salt
You’ll find this in the spice aisle at any grocery store. I’ve used both name brands and store brands, and honestly, they all work fine.
Bread
Use whatever you have on hand, but if you want something really special, check out our recommended easy bread recipe filed under “Easy Recipes.” You can toast the bread for a little extra crunch.
Serving on a croissant would be an excellent choice as well.

Ingredients
- 1 hard-boiled egg
- 1 tsp mayonnaise
- 1 pinch celery salt
- 1 slice bread
Instructions
- Mash the egg with the mayo and celery salt.
- Spread on the bread and fold in half.
