Here are 5 easy recipes I am loving right now. Over the past several weeks, I have made these recipes more than once. One I have even made multiple times in the same week!

No Knead Bread Recipe

A friend shared this No Knead Bread recipe with me recently. And I was delighted to see it was from RecipeTin Eats! I was on a homemade sourdough kick until I lost my almost 2-year-old sourdough starter. So I switched to making this bread and love it! 

I make a loaf almost weekly and sometimes twice a week! We use it for toast, sandwiches and even a simple bruschetta to pair with our pasta recipes. Including the ones below! 

This easy bread recipe puts my Lodge cast-iron set to work. I regularly use my cast-iron frying pan and now this recipe regularly puts my larger deep pot cooker to use, too. I’ve been using them so much I just bought a matching lid. Now I can stop using my heavy skillet as a lid. It’s quite a challenge to handle both pieces of cookware together. Especially while they are piping hot.

Puglia-style Roasted Tomato Orecchiette

Speaking of easy recipes, this simple and delicious pasta recipe from HelloFresh is quickly becoming a favorite. I was delightfully surprised by how light this recipe is on ingredients, yet so flavorful. I think every ingredient really adds to this dish. Especially the onions. Onions used to be one of the first things I would cut or substitute with onion powder. Definitely not this time. Don’t skip the onions, or any of the ingredients, if you can help it.

Homemade Chicken Shawarma

I usually make this dish on a weekend and plan to have leftovers again two days later. Or if I have a busy night coming up, then I plan to make this dish for dinner two days before. I love a good recipes that provides leftovers!

Pesto Pasta with Chicken

When I harvest basil from the garden, this recipe is in regular rotation. As our growing season ends, this will be made less. However, I have one more basil harvest. I plan to make a batch of pesto to freeze and enjoy in the off-season, too.

Pecorino Romano Pasta with Chicken

We’ve been making our way through a wedge of Pecorino Romano cheese. So this recipe inevitably has been in more frequent rotation. And I’m not mad about it. It’s a longtime favorite. Once the wedge is gone, it will surely pop up in my meal planning again soon.
