After-Hours Tortellini

This recipe* is amazing!  It’s restaurant quality, made right in your own home.  You’re crazy not to try it.

Found on Adryon’s Kitchen**, Adryon*** was generous to share this dish* with her readers.  She lovingly tells the story of its creation.  This a story you must read yourself to fully understand and appreciate the origin on this dish*.

I was a little hesitant at first to make this entree.  It’s a tad intimidating – coming from a far better chef than myself, having so much going on and using ingredients that I’d never worked with before.  But make it I did . . . and again . . . and again.  This is now one of our most favorite dinners to make at home.

Some After-Hours Tortellini Ingredients

I had never worked with grapeseed oil, kielbasa/smoked sausage and definitely knew nothing about sriracha sauce.  Now, I still haven’t found any other uses for grapeseed oil to date, but I am comfortable working with kielbasa and smoked sausage (I believe we like this dish best with kielbasa) and have developed a love of sriracha sauce.  Sriracha ketchup anyone?

Cookin’ up some After-Hours Tortellini

For any ‘spicy’ aversion out there, this recipe only has a slight kick and you can amp it up or down depending.  Adryon reminds you many a time throughout the recipe to taste-test the sauce to make sure it’s kept to your liking!  I usually keep it to about 1 to 1.5 tsps of sriracha sauce and love it!

Oh and this recipe is kind of a running joke with me, too.  You see, I always manage to leave an ingredient out.  No matter how many times I go over the list and have made it, I forget something.  As you can see, the first time I made it I forgot the tomatoes.  Then another time I forgot to start the tortellini.  Now as I plan to make it this evening for dinner I realize that I do not have any spinach!

    Grape seed oil is great for high heat cooking and has such a neutral flavor that it won’t overpower your dishes. You can use it in salad dressings or in anything you’d normally use with olive oil.

    1. Yeah, I’ve also found that my ability to forget an ingredient has very little to no effect on the dish in my opinion – thank goodness! I think the sauce, tortellini and sausage are key though. ; )
