Hands-on Time: 15 minutes
 Total Time: 45 minutes
Serves 6 
- 1 Tbsp canola oil
 - 1 small onion, finely chopped
 - 2 garlic cloves, minced
 - 1¼ lbs ground turkey breast
 - 1 8 oz can tomato sauce
 - 2½ tsp chili powder
 - 1½ tsp ground cumin
 - ½ tsp paprika
 - hot sauce, such as Tabasco
 - salt and pepper
 - 12 6″ flour tortillas
 
Optional Toppings:
- 2 cups shredded lettuce
 - 1 cup chopped tomato
 - ¾ c Mexican-style shredded cheese
 - ½ c sour cream
 - ½ c finely chopped red onion
 - ¼ c chopped jalapenos
 - taco sauce or salsa
 
- In a large skillet over medium-high heat, add oil. Saute the onion for 5-8 minutes or until softened. Add garlic and saute for 1 minute. Add turkey and cook for 6-8 minutes, stirring frequently to break it up. Add tomato sauce, chili powder, cumin and paprika and stir well to combine. Reduce the heat to low and cook for 8-10 minutes, stirring occasionally. Season with hot sauce, salt and pepper.
 - Meanwhile, wrap the tortillas in a damp paper towel and warm in the microwave on high for 15-30 seconds.
 - When ready to serve, place toppings in small bowls on the table. Layer about ⅓ c of turkey in a tortilla and add desired toppings.
 
Ditch the ground beef and seasoning packets! This is the best recipe for homemade taco meat!!
From The Great American Eat-Right Cookbook it’s very good and very easy! This is now my go-to recipe for taco night (or Cinco de Mayo!).

Also, if you’re like me and wish you had a tortilla warming press like Chipotle, the book points out that tortillas can also be warmed in an oven set to 250°F. Wrap in foil and warm while preparing the filling. So not quite like Chipotle but better than the microwave where I always manage to over cook them!
