Serves 2
- 2 Tbsp mayonnaise
- ½ tsp paprika
- 4 slices country bread
- 4 ounces thinly sliced smoked turkey
- 2 sliced roasted red peppers
- 2 ounces sliced manchego cheese
- 1 cup spinach
In a small bowl, combine the mayonnaise and paprika. Spread mayo mix on bread and form 2 sandwiches with the bread, smoked turkey, roasted red peppers, manchego cheese and spinach.
These sandwich recipes are introducing me to a lot of new types of bread and cheeses! For the record though, I haven’t found where the type of bread makes much of a difference from my typical run-of-the-mill wheat bread. The cheeses, of course, make a noticeable difference, but unfortunately always seem to cost an arm and a leg!
This was yet another Real Simple find but I’d have to say this turkey sandwich trumps. Maybe that’s because I’m not a fan of the roasted red peppers this one calls for. Although, yes, despite my veggie aversion habits I did try one on my sandwich as it seemed like the sandwich would be pretty bland otherwise.
