Serves 4
- 1 boneless, skinless turkey breast (about 2½ lbs)
- 1 Tbsp olive oil
- 2 tsp chopped fresh thyme
- salt and pepper
Heat oven to 400°F. Place the turkey breast on a rimmed baking sheet and rub with 1 Tbsp of the oil; season with thyme, ½ tsp salt and 1 tsp pepper. Roast until cooked through, 50-55 minutes.
Originally, this was one of three items all rolled into one recipe as part of a Real Simple ‘easy meal.’ I split them up as one of them really does stand out above the others and I didn’t like them all being rolled into one. I will be posting the other two recipes soon.
But let’s start with this one. In what world does it only take 50-55 minutes to cook a turkey breast? I ended up adding a total of 40 minutes onto this time and the turkey breast still came out more under cooked than I’d have liked. But like I said I originally made this as part of a meal recipe so I had my other dishes waiting on this stinkin’ turkey breast and getting cold and ruined. So definitely just follow the cook time and temp directions on the turkey itself to be sure it’s cooked through.
Needless to say this was not the recipe that stood out from the others. I was rather disappointed in it. And I’m not one to really flavor up my turkey aside from a good buttering and possible stuffing every now and then. So I do not anticipate giving this recipe another try.
