Not-So-Sloppy Joes: An Easy, Elevated Sandwich

I’ve been making these Not-So-Sloppy Joes for over a decade—ever since I first saw the original recipe in Real Simple back in 2012. They instantly became a go-to for casual dinners when I wanted something easy but a little more grown-up than the Manwich-and-American-cheese version from my college days.

I cook for two, and this recipe checks all the boxes: beginner-friendly, weeknight-fast, satisfying without being too heavy, and it leaves us with leftovers to enjoy again another night. It’s also a great summer sandwich—especially when you don’t want to turn on the oven, and dinner needs to happen quickly.

When Hormel discontinued their Not So Sloppy Joe sauce in 2023, it brought some new visitors to this old recipe post. If you’re looking for a flavorful, homemade, and elevated take on the classic sloppy joe—without the jarred sauce—this is the one.

To be honest, I never found it really any less sloppy than the old-school version, but that’s part of the charm. Toast the buns, grab a napkin, and enjoy.

Getting Started

Here are a few prep steps to get you set up for success:

  • Wash and dry your produce
  • Dice your onion and pepper, and mince the garlic (or measure out your powders if you’re going that route)
  • Shred your cheese, if needed
  • Slice the buns, if needed, and pop them in the toaster so they’re ready to go when you are

Not-So-Sloppy Joes Ingredient Recommendations

Onion & Garlic

You can absolutely swap fresh for powders if that’s what you have:

  • 1 small yellow onion = 1–2 tsp onion powder
  • 1 garlic clove = ⅛ to ¼ tsp garlic powder

Meat

The recipe calls for 1 pound of ground beef. Fresh or frozen, both work.

Cheese

I like to use block white cheddar and shred it myself. Sometimes I’ll grab the pre-shredded, store brand version. White cheddar has a sharp flavor and melds into the filling beautifully.

Not-So-Sloppy Joes Ingredient Alternatives

Vegetarian Option

I haven’t tested it yet, but a plant-based ground like Quorn Chiqin Grounds would probably work well here.

Gluten-free Option

The only gluten is in the bun, so consider using a gluten-free bun or skipping the bread for a gluten-free option.

No-Red-Meat Option

Swap the ground beef for ground turkey. I do this regularly and love it.

Non-dairy Option

Simply omit the cheese and sour cream.

Toast the buns. It prevents sogginess and adds a nice texture.

No-So-Sloppy Joes Pairings

For sides, serve with one or more of the following:

  • kettle chips
  • Pickle spears
  • coleslaw

Not-So-Sloppy Joes Leftovers

Cooking for two? You’ll get leftovers. Store the meat mixture in the fridge and reheat in the microwave. Just take the same care in assembling your sandwich again—toast the bun, add the cheese and sour cream, pour another glass of wine, and enjoy.

Ingredients

  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 1 clove garlic, minced
  • 1 red bell pepper, finely diced
  • 1 lb ground beef
  • 6 oz tomato paste
  • tsp chili powder
  • 1 tsp ground cumin
  • tsp ground black pepper
  • tsp ground cinnamon
  • 1 tsp kosher salt
  • 4 hamburger buns, toasted
  • ½ c grated Cheddar cheese
  • ½ c sour cream

Instructions

  • Wash and dry produce. Finely dice onion and bell pepper. Mince garlic.
  • Heat the oil in a large saucepan over medium heat. Add the onion, garlic and bell pepper. Cook until softened, about 3 minutes.
