Serves 4
- 16 buttery crackers, crushed
- 6 oz sharp Cheddar cheese, grated
- 1 clove garlic, finely chopped
- salt and pepper
- 1½ lbs chicken cutlets
- 4 Tbsp unsalted butter, melted
- Heat oven to 350ºF. In a bowl, combine the crackers, cheese, garlic, and ¼ tsp each salt and pepper.
- Dip the chicken in the butter, then in the cracker mixture, pressing gently to help it adhere, and place on a foil baking sheet.
- Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown and cooked through, 25-30 minutes.
I like chicken. I like cheese. I like a nice buttery cracker crunch. I was not a fan of this dish however. Yet another Real Simple find, this recipe was easy enough but left more to be desired.
I served the Cheddar Chicken with Rice Pilaf and a homemade salad – complete with homemade croutons. But overall the meal was just so-so. It doesn’t top my list as one to make again.
This has got to be one of the shortest recipe posts I’ve written. And in a way it really speaks to all-around simplicity (ease, taste and otherwise) of this dish.
