- 1 banana
- 2 tsps nut butter (almond or peanut)
- 1 Tbsp toasted shredded coconut
Slice the banana. Serve with the nut butter and sprinkle the coconut over top.
When I first saw this recipe it took me back to childhood. Bananas and peanut butter. Mmm. The only way I can eat a banana honestly. When I shared my reminiscence with my husband – one of the biggest fans of banana lovers I know – he had never heard of such a combination!

The original recipe calls just for almond butter. But I didn’t like it and have since switched to only using peanut butter. No, not the pure, organic kind either. I know, tsk tsk.
The only ‘difficult’ part, if you want to think of it that way, about this recipe is toasting the coconut. I just spread some coconut out on a baking sheet, set the oven to 350F and keep an eye on it. Be careful, it does go from white to burnt really quickly. But to get that right toasted brown it only takes a matter of minutes.
This snack makes an excellent side for sandwiches or just a treat all on it’s own!
