Creamy Parmesan Dressing

Total time: 5 minutes
Makes 1 ¼ c (serves 8)

 

  • ½ c olive oil
  • ½ c grated parmesan
  • ¼ c sour cream
  • 2 Tbsp white wine vinegar
  • Salt and pepper

 

In a small bowl, whisk together the oil, Parmesan, sour cream, vinegar, 2 Tbsp water, and 1/4 tsp each salt and pepper.

You’ll come to find that a common theme among my recipe trials are to recreate restaurant experiences.  For example, my hunt for Chi-Chi’s Sweet Corn Cake.  This Creamy Parmesan dressing seemed a lot like Carrabba’s house dressing.

Have you ever had Carrabba’s house dressing?  If not, get on that.  In addition to having it on a salad, be absolutely sure to request it served on the side with your complimentary bread.  Dip or spread the dressing on the bread and enjoy this delicious combination.  Now apparently this a little known combo, even among Carrabba’s staff, so if you get a funny look or hesitation when you request it don’t re-consider.  Stick with it and give it a try.

So was I able to recreate this seemingly grand dressing?  Well, no. It’s similar but doesn’t hold a candle to Carrabba’s.  Perhaps I’ll have some opportunities to tweak it sometime and see if I can’t get it closer.  For now though, if you give this dressing a try, I will tell you that it has strong flavor so you don’t need gobs of it.  Even what is shown in the picture is a little much.
