Moo Shu Chicken Lettuce Wraps

Moo Shu Chicken Lettuce Wrap

Prep Time: 15 minutes
Total Time: 30 minutes or less
Serves 4

  • 1 Tbsp canola oil
  • 2 c sliced mushrooms
  • ¾ lb boneless, skinless chicken breasts or chicken cutlets, cut into very thin strips
  • 3 c shredded cabbage or coleslaw mix
  • ½ c matchstick-cut carrots
  • ½ c thinly sliced red bell pepper
  • 2 scallions, thinly sliced
  • 3 Tbsp hoisin sauce, or to taste
  • 1 small head Boston or Bibb lettuce, leaves separated and core discarded
  1. In a wok or large skillet over high heat, add oil. Saute the mushrooms for 1 to 2 mintues.
  2. Add chicken, cabbage, carrots, bell pepper, and scallions and saute for 5 to 7 minutes or until tender.
  3. Add hoisin sauce and stir to combine. Cook for 1 to 2 minutes, or until vegetables and chicken are cooked through. If sauce is too thick, add 1 Tbsp water.
  4. Spoon moo shu into lettuce leaves.  Top with a small dollop of hoisin, if desired.

Woah!  Look at all those veggies!!  Yep, you heard it here first (like you’d hear it anywhere else!), I am coming out of my veggie aversion.  Slowly but surely.  At first, I was appreciating the use of them for flavoring.  But now I’m actually eating them instead of pushing them aside.  I’m beginning to embrace the healthy, fresh, crisp taste of fruits and veggies more and more.  And you can do so much with fresh produce for such a little cost!  I’m loving this new, healthier eating my husband and I recently committed to.

And this recipe is loaded with fresh veggie goodness.  And meat!  Cannot not have meat with my hubby around.  This Moo Shu Chicken Lettuce Wrap recipe comes from The Great American Eat-Right Cookbook.  Using lettuce as the wrap part to hold it all together was a little challenging.  It didn’t stay together very well.  And it was very juicy and runny so it was a tad messy.  But overall it was very good.  You could just eat it right off the plate rather than wrap it up as finger food.  We also discovered, while it adds calories, you can just plop the ingredients on some bread and have it as a delicious sandwich!

The sauce and mixture of vegetables lends very nicely to the flavor.  It’s not too spicy for those that may be worried about that.

As for sides, well you’re getting a pretty balanced meal in and of itself.  But if you’re looking to add a little something more, I’d suggest rice and/or fruit!
