Hands-on Time:  10 minutes
Total Time:  8 hours 10 minutes

  • 2-3 lbs boneless pork roast, cubed
  • 2 onions, chopped
  • 12 oz bottle barbecue sauce
  • ¼ c honey
  • sandwich rolls, optional
  1. Place meat in slow cooker.  Add onions, barbecue sauce, and honey.
  2. Cover.  Cook on Low 6-8 hours.
  3. Use 2 forks to shred meat.
  4. Serve on rolls with sauce.

Recently the hubby and I had a luau night.  The weather was kinda crummy outside so it was fun to give our little evening in a tropical feel.  Put on some islandy tunes and cooked up a mini luau feast complete with leis and mai tais!

For the main dish, I went with this pulled pork recipe from the Fix-It and Forget-It Cookbook.  I love, love, love a good crockpot meal.  No muss, no fuss!  Although I think I need to use my smaller crockpot next time as the pork was a little overdone for my liking.  My husband so agreeably said it was cooked just how he liked it. Aw, how sweet . . .

The recipe is pretty self explanatory.  With a meal like this it’s always fun coming up side dishes.  We went to Hawaii for our honeymoon so I was racking my brain for what types of dishes we had at the luau we attended on the islands.  I ended up with macaroni salad, fried rice, King’s Hawaiian Sweet Rolls and mai tais!  Yum!

The dish alone is great for a quick meal, a get together or a festive night in like we did.  Ohoiho!

PS – I’m still making this recipe today although with a new cheesy twist – Pulled Pork Mac and Cheese!
